Everybody's favourite: a mojito, but better!
- 50ml Caramelised Pineapple and Passionfruit Rum
- 25ml freshly squeezed lime juice
- 25ml sugar syrup (1 part sugar,1 part water. Mix until sugar dissolves)
- 6-8 fresh mint leaves
With the back of a bar spoon, churn ingredients together in a tall glass with crushed ice. Garnish with more crushed ice, Angostura bitters and a sprig of fresh mint.
