Everybody's favourite: a mojito, but better!


  • 50ml Caramelised Pineapple and Passionfruit Rum
  • 25ml freshly squeezed lime juice
  • 25ml sugar syrup (1 part sugar,1 part water. Mix until sugar dissolves)
  • 6-8 fresh mint leaves


With the back of a bar spoon, churn ingredients together in a tall glass with crushed ice. Garnish with more crushed ice, Angostura bitters and a sprig of fresh mint.
